Crispy Sweet Potato Fries with Chipotle Mayo

INGREDIENTS:

For the Chipotle Mayonnaise:

  • ½ cup (125 ml) mayonnaise

  • ¼ teaspoon (1 ml) fresh lemon juice

  • 1 chipotle chile in adobo, finely chopped

For the Sweet Potato Fries:

  • Olive oil, for spraying

  • 500g sweet potatoes (about 2 medium), cut into 1cm thick pieces, about 10 cm long

  • ½ teaspoon (2.5 ml) kosher salt

 

DIRECTIONS:

  1. Prepare the Chipotle Mayonnaise: In a small bowl, combine the mayonnaise, finely chopped chipotle chile, and fresh lemon juice. Stir until well mixed. Cover the bowl and refrigerate until ready to serve.

  2. Prepare the Sweet Potato Fries: Place the cut sweet potatoes into the Air Fryer Basket. Spray liberally with olive oil, then sprinkle with kosher salt. Toss to coat evenly.

  3. Arrange the sweet potato pieces in a single layer in the basket to ensure even cooking and crispiness.

  4. Insert the Air Fryer Basket into rack Position 2 of your Plum Chef oven. Select the FRENCH FRIES function and set the temperature to 230°C for 21 minutes. Cook until the fries are golden brown and crispy.

  5. Once cooked, transfer the sweet potato fries to a serving bowl. Serve immediately with the reserved chipotle mayonnaise on the side.
