Ingredients:

1 lemon, halved

1 garlic clove, smashed

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

2 teaspoons herbs de Provence (or other dried herbs like rosemary and thyme)

1 whole chicken (about 1.8 kg)

1 teaspoon extra virgin olive oil
Directions:

Line the Plum Chef Baking Pan with aluminum foil for easy cleanup.

Rub the chicken with salt — half inside the cavity, half over the surface. Place the lemon halves and garlic inside the cavity.

Drizzle olive oil on top of the chicken and season with herbs and pepper.

Put the baking pan into the rack Position 3, and set the oven to Roast Mode at 200°C.

Cook for 40 minutes, or until the skin turns golden and crispy and the inside is fully cooked.
Pro Tip:
Baste the chicken halfway through roasting for an extra crispy finish. Let it rest for 10 minutes before slicing.

Tear the kale leaves into bite-sized pieces and spray lightly with olive oil.

Place the leaves in the Air Fryer Basket and insert into rack Position 2.

Set the oven to Bake Mode at 176°C and cook for 5 minutes, or until crispy.

Sprinkle lightly with salt while warm and serve immediately.
Note: Keep an eye on the kale while baking — it turns crispy very quickly!
