Easy Air Fryer Open-Faced Reuben Sandwich Recipe

By Joe

Welcome to The Oven Diaries! Today, we're putting a quick and easy spin on a beloved deli classic: the Reuben Sandwich. Using your Plum Chef Air Fryer Oven, we're creating an Open-Faced Reuben that delivers all the iconic flavors you love – savory corned beef, tangy sauerkraut, creamy Thousand Island dressing, and melted Swiss cheese – but with a fraction of the effort and time.

The secret to this recipe's success is the TOAST function of your Plum Chef oven. It perfectly melts the cheese into a gooey blanket while crisping the edges of the rye bread to create the ideal sturdy base. Forget heating up the entire oven or struggling with a panini press; this method is streamlined, mess-free, and delivers a consistently delicious result every time. It's the ultimate solution for a satisfying lunch or a light dinner that feels indulgent.

Let's create this hot, melty, and utterly satisfying sandwich in just a few simple steps.

Air Fryer Open-Faced Reuben Sandwich

Prep Time: 5 minutes
Cook Time: 8 minutes
Temperature: Toast Setting
Serves: 2

INGREDIENTS:

  • 2 tablespoons Thousand Island dressing
  • 2 slices rye bread
  • 8 ounces deli corned beef, thinly sliced
  • ½ cup sauerkraut, well drained
  • 4 slices Swiss cheese

DIRECTIONS:

  1. Spread one tablespoon of Thousand Island dressing evenly on each slice of rye bread.

  2. Layer half of the corned beef, followed by half of the sauerkraut, on top of each dressed bread slice.

  3. Finish each sandwich by placing two slices of Swiss cheese on top.

  4. Place the Wire Rack in the oven in the middle rack position.

  5. Carefully transfer the assembled sandwiches onto the Wire Rack.

  6. Set the Timer Knob to 8 minutes, the Temperature Knob to Toast, and the Function Knob to Toast.

  7. Toast for 8 minutes, or until the cheese is completely melted and bubbly, and the edges of the bread are golden brown and crispy.

  8. Once done, carefully remove the sandwiches and serve immediately.

Chef's Tip: For an extra crispy base, you can toast the rye bread lightly for 1-2 minutes before adding the toppings. Feel free to customize it with Russian dressing or add a sprinkle of caraway seeds for an authentic touch.
