Mixed Berry Cobbler with Streusel Topping

Prep Time: 15 minutes
Cook Time: 30 minutes
Temperature: 175°C/350°F
Serves: 6-8

INGREDIENTS:

For the Berry Filling:

  • 2 cups fresh or frozen mixed berries (such as blueberries, raspberries, blackberries)

  • ½ cup granulated sugar

  • 2 tablespoons unsalted butter, melted

  • 2 tablespoons all-purpose flour or cornstarch

  • 2 teaspoons lemon juice

For the Streusel Topping:

  • ⅔ cup all-purpose flour

  • ¼ cup granulated sugar

  • 2 pinches kosher salt

  • ¼ teaspoon baking powder

  • ¼ cup unsalted butter, softened

DIRECTIONS:

  1. Prepare Berry Filling: In a mixing bowl, combine all berry ingredients - mixed berries, sugar, melted butter, flour (or cornstarch), and lemon juice. Stir well until berries are evenly coated.

  2. Transfer to Pan: Pour the berry mixture into a greased 8x8-inch baking pan, spreading it evenly.

  3. Make Streusel: In a separate mixing bowl, combine all streusel ingredients - flour, sugar, salt, and baking powder. Add the softened butter.

  4. Combine Streusel: Using your fingertips, pinch the butter into the flour mixture until clumpy but no visible dry flour remains.

  5. Add Topping: Pour the streusel evenly over the top of the berries, covering most of the surface.

  6. Position in Oven: Place the Wire Rack in the oven in the bottom rack position. Place the baking pan on the Wire Rack.

  7. Bake: Set the Timer Knob to 30 minutes, Temperature Knob to 350°F, and Function Knob to Bake.

  8. Rotate and Finish: Bake for 15 minutes, then rotate the baking pan 180 degrees and continue to bake for an additional 15 minutes, or until the topping is browned and the berry filling is bubbly.

  9. Serve: Remove from oven and let cool for 10-15 minutes before serving warm.

Chef's Tip: For extra flavor, add ½ teaspoon of cinnamon or vanilla extract to the streusel topping. If using frozen berries, there's no need to thaw them first - just increase the baking time by 5-10 minutes if needed. The cobbler is done when the filling is bubbling around the edges and the topping is golden brown.
